Almost Clean Banana Muffins

I started with all good intentions.  I was going to make these yummy banana muffins, but then I realized two things:
1. I didn't have greek yogurt
B. I wanted chocolate
So, I did what any normal human would do...I went to the store and also 86ed the totally clean banana muffins (don't worry, if you don't put the chocolate chips in, it'll be clean).  These muffins are amazeballs!  Reminds me of smoother banana oatmeal.  Oh yeah, side note, how come I just found out you're supposed to freeze bananas without the peel?? ha, No wonder it always took me forever to peel it when it was frozen (don't judge my life).  Here is the recipe that I promised:


2.5 cups old fashioned oats 

1 cup plain low fat greek yogurt
2 eggs
1/2 cup honey
2 tsp baking powder
1 tsp baking soda
2 TBSP ground flax seed
1 tsp vanilla
2 ripe bananas 


1. Preheat the oven to 350 degrees. Spray a muffin tin or put in cupcake holders
2. Place the oats in the food processor and pulse for about 10-20 seconds.  Add remaining ingredients to the food processor (make sure it's all mixed together and smooth)
3.Add to muffin tins (or if you're like me, add some mini chocolate chips and stir before putting in batter)

4. Bake for 17-20 minutes, or until your toothpick (or knife ha that's what I always use) comes out clean.

Super yummy, I think next time I'm going to add cinnamon too :)
