In our house the constant, "there's nothing to eat" doesn't come from my son...it's the hubs (of course this look consists of a quick look around the pantry and a one time open of the fridge). I am on the hunt of find new, easy dinners. Last night was a great success!
You'll need:
* Chicken Breasts (I used 3)
* 1/2 cup balsamic vinegar
* pinch of sea salt
* black pepper
* garlic powder
* 1/2 onion (thinly sliced)
* TBSP minced garlic (I love garlic, so you can do this to your taste)
* 1 TBSP virgin olive oil
* 1 (14.5 oz) can of organic diced tomatoes (I liked the fire roasted kind)
* 1 tsp: rosemary, oregano, basil
* 1/2 tsp thyme
Directions:
1. Add in olive in bottom of crockpot
2. Add the spices together in a bowl
3. Sprinkle the spices over the chicken
4. Add in tomatoes and vinegar
I cooked mine on low for 8 hours and it was amazing!!
The chicken fell apart with a fork. Even D ate it!
This worked great for us 3 and gave us leftovers.
